At least once a month she was probably bringing soup over (since we got sick a lot) and it was worth it to get sick just to have Grandma's delicious soup. It was always so creamy, tasty, and just what you needed to help you feel better.
With the weather finally cooling down, and all the rain I decided I was ready to make some soup. Grandma Evans has been in my thoughts and heart a lot lately. I teach piano lessons on her piano. When Grandma passed away my parents got her baby grand piano which was pretty much mine, since I'm the only one who really played it regularly. Its been my primary piano since I was 13. I've always felt close to grandma when I play. I feel a connection to her. She was always encouraging me in my music. I know that Grandma is one of my guardian angels taking care of me on the other side.
Even though 13 is fairly young for your Grandma to pass away, I still remember her vividly. We got to spend a lot of time together. After her husband Fay passed away, Grandma was nervous sleeping all by herself in an empty house. I got have lots of sleepovers with her. When I went to her house I got to stay in Grandpa's old room (they had separate rooms) that had a beautiful view of the temple across the street. Grandma would roll out the red carpet for you when you stayed over, making you gourmet breakfasts with fresh squeezed orange juice. She would often take my brother and I swimming and out for ice cream.
Sometimes she would sleep over at our house in my bed with me if it was a school night. Laying next to each other in the dark, her grey curls up in a little hair net, she would tell me stories of her childhood as we drifted off to sleep. The next day when I would return home from school, I would find that Grandma had cleaned my room and left me a little note with some money or a treat.
Whenever I have a cert, I think of Grandma. She was always pulling them out of her purse and offering them to us.

My whole family still misses her after over 16 years since her passing. Every June we gather at her grave site on her death day and drink Pepsi in her honor after finding out she had a hidden addiction to it when my mom and sisters found cases of it hidden throughout her house.
So with thoughts of Grandma on my mind I decided to make her amazing soup.

Here is the way I did it (I'm a little lazy so I just boil the noodles in the same pot as the soup instead of adding cooked noodles in later).
Grandma's Hearty, Creamy Chicken Noodle Soup
Ingredients:
8 Cups Of Chicken Broth
2 Cups of Chopped Carrots
2 Cups of Chopped Celery
1 Chopped Yellow Onion (we like onions)
2 Cups of Egg Noodles
2 Cans of Cream of Chicken Soup
1/4 Cup of Evaporated Milk (or half a small can)
1 Cup of Whole Milk
2 Cups of Diced Rotisserie Chicken
Kosher Salt and Black Ground Pepper to taste
Directions:
Boil carrots, celery, and onion in broth, add in noodles and boil according to time. Whisk in cream of chicken, whole milk, and evaporated milk. Add Chicken and Salt and Pepper. If its not thickening up as much as you like, whisk in some flour.
Eat with rolls and crackers!
It was so yummy. I already can't wait to have leftovers. Soup tastes even better the next day.

I was so mad when I opened up the broths and found that both of them had already been opened and were actually expired! So I ended up just doing 8 cups of water with chicken bullion cubes. I will be returning those broths (even if was only a few dollars) and be checking labels more carefully in the future!
So while I got the 8 cups of water boiling I chopped up the carrots and celery using this amazing knife. I love this knife set! Its all color coded according to what you are supposed to use it for and they are super sharp! Each knife comes with its own matching cover. They are an awesome buy!
Once the water was boiling I added in the 8 chicken bullion cubes and let them dissolve while I chopped up the onion with my little Cuisinart. This has saved me from shedding a lot of onion tears.
Then I dumped all the vegetables into the broth and let them start to boil.
Next I measured out some noodles and added them to the broth and just let them boil with the vegetables since I'm to lazy to use another pot and boil them in there to add to the soup later.
After about 15 minutes I whisked in the Cream of Chicken Soup and the milks.
And then I added in the diced rotisserie chicken:
Since it wasn't very thick I added in a little bit of flour and whisked some more.I added in some Kosher Salt and Grinded on some Pepper and continued to stir and taste.
Dinner was served! It was amazing!
