Easiest Cheese Enchiladas Ever


We live close to the high school so my girls are always coming home for lunch and bringing friends. This is what I made for them last week. 

Ingredients:

corn tortillas
shredded cheddar or cheddar jack cheese
sour cream
vegetable oil
Las Palmas green enchilada sauce

(1 large can will cover 1 1/2 pans of enchiladas so I did 10 enchiladas in one pan and 6 in another for us for dinner that night)


Pour a little of the green sauce to coat the bottom of a 9x13 pan

heat 3 TB oil in pan and soften tortillas in it so they roll up easier


then spread each tortilla with a bit of sour cream


top with cheese


roll up and put in pan


layer with rest of green enchilada sauce and top with cheese


bake at 350 for 20-30 minutes covered, then 10 minutes uncovered
I forgot to take a picture of the finished product but they are delicious and so easy!

*Sometimes I add cooked, shredded chicken and refried or black beans to them but my girls love just cheese.
