Pumpkin Cupcakes with Maple Cream Cheese Frosting


Last weekend we had a retirement party for my mom.  On the agenda was Cafe Rio Salads and
cupcakes for dessert. YUM!!   I made an assortment of cupcakes.  305 to be exact!  But the favorite by far were my Pumpkin cupcakes.  They were the first to be eaten.  I have even made them again this week because they were JUST.THAT.GOOD.

These cupcakes are so easy to make.  The base of the batter is a yellow cakemix.  Then I added stuff to it to make them more moist.  



I used a small cookie scoop to fill the mini cupcake tins.  This recipe makes about 60 minis.  They are perfect bite size cupcakes.  Although, it is hard to stop at just one!  Everyone had multiple cupcakes.  But they are minis, so the calories don't count, right?




 Bake them at 350 for 15 minutes.  I took them out of the oven and immediately let them cool on parchment paper.  


Wait for them to be completely cool before you start to frost them.  I used a star tip to make a really cute design.  It makes them look professional and like you spent 100 hours on them.  When in reality, it takes 2 seconds to frost each one.


See, don't they look so pretty!  They are seriously so easy to frost.  It took me longer to make the frosting than to frost 60 cupcakes.  


This was my display of cupcakes for my moms retirement party.  It was so pretty that I just wanted to stare at it!  It was a lot of work, but so rewarding to see so many people enjoy them.  I made 6 different flavors.  At the end of the night, we didn't have any left!  

Pumpkin Cupcakes with Maple Cream Cheese Frosting

Cupcakes:
1 box Yellow Cake Mix
3 eggs
1 (15 oz) can Pumpkin
1/2 cup oil
1/3 cup milk
2 tablespoons vanilla
1-2 tablespoons Pumpkin Pie Spice (you could also use cinnamon, ginger, cloves, allspice, nutmeg)

Frosting:
8 oz cream cheese, softened
1 stick butter, softened
3-4 cups powdered sugar
1 tsp vanilla
1 tsp Maple flavor

Mix all the cupcake batter ingredients in your mixer until smooth and no lumps.  Line cupcake tin with liners.  Fill about half full with batter.  ( I use a small cookie scoop).  Bake in oven at 350 for 15 minutes.  

For the frosting, mix the butter and cream cheese together until creamy smooth.  Then add the other ingredients.  You may need to add a little milk if the frosting is too stiff.  You want the frosting to be stiff, but not too stiff.  When you put it in a pastry bag to frost the cupcakes, you want the frosting to stay in place.  If you frost a few cupcakes and the frosting is running off the sides, it's not stiff enough and you need to add more sugar.  

*Note
Since I was making so many cupcakes for this party, I made them in advance.  I baked them and immediately took them out of the oven and put in a freezer ziploc back and put in the freezer.  I didn't let them cool down at all.  Then the day of the party, I took them out of the freezer and frosted them.  They are really easy to frost when they are frozen!

Rustic Lemonade Stand

My friend asked me to help decorate her daughter's outdoor reception this past May. The Bride really wanted a Lemonade Stand for part of her decor and use as a display and serving area. I started googling Lemonade Stand Ideas and all of them seemed to require too much effort to make the entire base first and then add the wood and top, so I came up with this idea.....

I had  bought this "blind" cabinet in March from the KSL classified ads because I wanted to try to make a kitchen island out of it.  It's 24 inches deep so I felt that it was too wide for the space I had.  It was only $20 so I didn't feel bad about not using it and donating it to our garage to use as storage.  

We had weathered cedar fencing from 3 fence panels that we had replaced last fall.   So.....I put the two things together and came up with my solution for the Lemonade Stand!  



The main area of the fence panels is all tongue and groove cedar. We wrapped the back and sides of the cabinet with the tongue and groove, using my neighbor's nail gun to adhere it on.  We also spray painted the front and sides black in case any gaps would show thru.  I'm thankful Scott thought of that because we had plenty of gaps!  

We had left over weathered wood from my dad's wood pile that we had used to make the Barn Doors for the Ward Fall Ho' Down.  We used that for the top/counter of the stand and also the "sign".  Scott even figured out how to notch the sides of the sign into the counter so it would all be flush. Because of all the wood on it, it is heavy.  I want to add locking casters to help maneuver it better.  Someday those will be put on. ;)

I love that my Lemonade Stand is made out of a cabinet because it has a drawer and a closing cupboard with a shelf to store things on/in. The right side is big enough to hold my cooler for ice!

10 Tips on How to Soothe a Sore Throat

I have had a lot of experience with sore throats. I had strep throat and tonsilitis more times than I can count before I finally got my tonsils out a few years ago. Right now I have a nasty sore throat and I am breaking out all my old tricks to help it feel better.

My throat hurt so bad today I didn't want to eat anything. It felt like somebody had taken a razor to my throat and slashed it up. My breakfast was marshmallows and honey and they didn't hurt my throat, but soothed it instead!


How to help your sore throat:

1. Marshmallows. Just eat a big marshmallow! For some reason it helps!

2. Honey. Eat a spoonful of it or spread it over some toast.

3. Hot Chocolate. I feel like it help burns some of the germs away. Plus put marshmallows in and that helps even more!
4. Throat Spray to help numb your throat.

5. Mouthwash with Chlorasceptic in it.
6. Gargle with warm salt water. Its gross, but it really does help kill germs in your throat and helps clean and soothe it.

7. Ibuprofen. It helps the swelling go down in your glands and throat and helps the pain.
8. Cough Drops

9. Suck on things, suckers, candy, etc.

10. Gargling Hydrogen Peroxide will also help kill germs and when the germs are gone, your throat won't hurt! I know its gross, but it helps!

Hope you get feeling better! Remember if you have white spots in your throat, a tummy ache, a fever. and swollen glands you probably have strep and need to get to the doctor and get on antibiotics ASAP!

My Top Weightloss Tips


We are all on a quest to improve our physique. Its a never ending battle! If you aren't moving forwards you rarely stay still. Instead, if you let go, or slack off for a bit with your healthy eating and exercise habits, all of a sudden you have gained back a chunk of weight. Here are some of my tips that I've learned along the way to help keep the weight off or lose even more that you don't have to stress about too much.

With every meal, you need to have water. You should keep it by your bed, by you on the couch when you watch T.V., in the car, by your computer,  everywhere. Some people even name their water bottle they get so attached to it. Don't waste calories drinking juice, especially not soda, or even milk. Just drink water! I love this water bottle  below that you can stick a lemon or lime or any fruit on one side and infuse it right into your water bottle for a yummy, healthy flavor that is much better for you than those artificial flavor packets. Drinking water helps you curb your appetite, aids digestion, and has an added benefit of keeping your skin nice and clear.

 
 #2 Have a lot of healthy and easy to eat snacks on hand.

My favorites are Kirkland Signature Almonds from Costco, the shelled Wonderbar Pistachios, a spoonful of peanut butter, Tillamoo's Cheddar Cheese flavor, a variety of fresh fruits, hummus with Stacy's Pita Chips or carrots to dip in it, rice cakes (peanut butter spread on them is yummy), Pirate Booty from Costco, cucumber slices, little sweet red peppers, and cottage cheese with peaches or pears.Those 100 Calorie Popcorn bags with some coconut oil melted over it is really yummy too and the coconut oil is a good fat that helps your body metabolize better and helps you have whiter teeth!

#3 Workout at the same time every day!

I always work out right after I put my baby down for her nap. So I am automatically putting on my sports bra and getting ready to sweat right after leaving her room! It has become a habit. I get my other daughter involved in an activity like one here or she will exercise with me!

With me being mostly homebound I stream most of my workouts through my Roku on my T.V. I have done the Gymbox, Daily Burn, and now I'm doing Beach Body on Demand which is my favorite by far. They offer you a 30 day free trial so you could try it risk free and decide what you like best. I really liked all of them and they all have different strengths. The Gymbox has the most workouts, but its not as professional. The Daily Burn is very professional and even gives you an idea of how many calories you burned and tracks the workouts you've done and has lots of programs to do. The only reason I quit it and moved onto Beach Body on Demand is because I got a little burnt out after doing pretty much all the workouts  Beach Body on Demand is the one I use now and will forever! It has all the famous programs on there, P90X, Insanity, Turbo Fire, T25, 21 Day Fix, Cize, Piyo, etc. They are always adding new ones. I also ordered the 21 Day Fix Extreme and that is right there on my online so I don't have to get the DVD's out or anything. Just go to my Roku, go tot he Beach Body on Demand and select my workout!

#4 Workout with a friend so you look forward to the socializing time and you are held accountable!

My neighborhood meets at our local church every morning at 9 am to do alternate workouts of Zumba and Circuit Training. The kids all play at one end of the gym with the nursery toys while the moms workout! I look forward to the company and my girls love playing with the other kids.

I also go to Ballet Blast which is a barre type workout with my friend Amber occasionally. Its almost like a girls night! We have so much fun, but burn sooo many calories.

#5 Buy weighted gloves to literally get "more punch" into your workout!

I got these weighted gloves about a year ago and I love them! I think I might want to order the 2 lb. ones since I've gotten a lot stronger and could maybe use some more resistance. Wear these gloves when you are doing kickboxing, zumba, any cardio workout, walking, picking up toys, whatever. It gives your arms a great workout! Even though they are only 1 lb. each, it makes a huge difference. When I forget to wear them to Zumba or doing Kickboxing it seems so easy and I feel like my arms are really missing their workout.



#6 Drink Shakeology!!!!

If you haven't tried Shakeology, you need to! I am kicking myself that I waited over a year to try it after I first heard about it. I was a skeptic. Now I'm hooked! I love it because it boosts my mood, gives me energy, takes away my headache and stress, and provides me a meal every day that I don't have to think about besides what sounds yummy to blend in with it. It is extremely nutrient dense, low in calories, and high in protein and fiber. I've only had a few shakeologies so far and I already noticed that the bumps on the back of my upper arms that I've had for years, WENT AWAY!  I've heard those were there because of some vitamin deficiency. Shakeology must have solved that! I know its a little pricey. That's why I became a coach so I could have a discount! But its worthy every penny! #7 Do lots of strength training. Its just as important as your cardio!

Don't be afraid of lifting heavy weights! Building muscle is a great way to  shed fat. Muscles burn a bunch of calories so you become a calorie burning machine even when you are just lounging around watching Netflix. I would strength train as much as you do cardio! Its probably even more important. Don't be afraid that you are going to get bulky and manly. It just isn't how women's body's work. You will have sexy, sculpted muscles that make you look lean and womanly Muscles are smaller that fat so you will actually look more tiny. I bought a dumbells set last year and I use it every day! Now I want to invest in even heavier weights! This is the dumbell set I use. I love it! They are easy to hold and don't hurt the skin on your hands and they store really easily. I actually keep the weights in the bottom of my basket that I have a bunch of blankets in by my couch. It also comes with a video that shows you various exercises to do with the weights that I have used many times.



#8 Use My Fitness Pal to track your calories!

https://www.myfitnesspal.com/ is a free way to track your calories! You can download a free app for your phone too. It has a huge database of food. I love the feature where after you've entered in your calories for the day it tells you "If you ate every day like today, in 5 weeks you would weigh ____ lbs.". That really puts things into perspective for me. A big part about losing weight is how many calories you consume. If you want to lose a lb. a week you need to have a deficit of 3500 calories. So you need to either eat 500 calories less a day than you burn or you can burn 250 calories exercising and eat 250 calories less. Its science! As my blog title says, I'm a HUNGRY MOM! So I exercise to help with the calorie deficit. I pretty much exercise to eat more :). But now I've gotten addicted to exercising so if I don't I notice I feel a little grumpy and don't have as much energy.


#9 Listen to your body!

You need to make peace with food and eating. Its so hard! We have been at war with food since our first diet. But the deal is, we need food to nourish our bodies. And food should be enjoyed. So much of our lives revolve around it. So I suggest be friends with it. Don't ban a food. It will only make you want it more if its forbidden. Just listen closely to your body. It knows what it needs to be healthy and for you to feel good. If that soda is making your stomach feel bloated, put it down and maybe don't pick it up again! If you are feeling satisfied, STOP EATING! Don't continue to mindlessly shove food down your gullet until you are uncomfortable and sick or just to clear your plate. Its okay to throw food away.

#10 Be active, have fun, and get good sleep!

Getting a fitbit is a great way to motivate you to be active. It tracks your steps so you can see how much you actually move! It has lots of neat tools on there to tell you how much sleep you have gotten as well which is another important part of weight loss. It keeps you accountable and also motivates you! Chase your kids around. Throw them in the air. Go for walks, hikes, and bike rides. Get off your behind and clean the house, play with the kids, take them to the park and play tag, turn on some music and have a dance party, just get moving and have fun with it. Then you will be burning calories all day long and not just during your half hour workout time. Love that body of yours and don't be afraid to move and shake it no matter the size. It will get smaller and prettier if you do!

Diets are so hard!  I am so addicted to sugar and flour it's insane.  
I found this list and loved it so I thought it might help you too.





One thing I am trying to do is drink water before I eat anything at all.  They say to drink half of your body weight in water to lose weight and that is so hard!  Especially if you weigh over 200lbs!


• Think of snacks as mini-meals that contribute nutrient-rich foods. You can fit snack calories into your personal healthy eating plan without over-spending your day’s calorie budget.

 • Snack only when you’re hungry. Skip the urge to nibble when you’re bored, frustrated or stressed. Feed the urge to do something by walking the dog or organizing a space. 

• Keep portion control in mind. Have a single-serve container of yogurt or put a small serving of nuts in a bowl. Eating directly from a multiple-serving package can lead to overeating. 

• Plan snacks ahead of time. Keep a variety of nutritious ready-to-eat supplies on hand, such as whole-grain crackers and low-fat cheese. Get creative by swapping out different fruits, vegetables and grains to keep your snacking exciting!

Three Ingredient Pumpkin Chocolate Chip Cookies

My daughter came home from an all day horse ride one day and raved about these pumpkin chocolate chip cookies that one of the friends had brought to share.  She begged me to get the recipe and when I called to get it, I couldn't believe how easy it was.  They are so yummy!  You have to make them this fall!! Everyone I take them to asks me for the recipe:)





In a large mixing bowl, combine the cake mixes and canned pumpkin





Add Chocolate Chips



Scoop onto cookie sheet with a Pampered Chef cookie scoop that you buy from my friend Tina:)

Easy 3 Ingredient Pumpkin Chocolate Chip Cookies

2 Boxes of Spice cake mix
1 large can of pumpkin 
1 bag of chocolate chips (milk, semi or mini)

Mix the pumpkin and cake mix together and then add the chocolate chips. Spoon onto cookie sheet with the dough scoop. Bake at 350' for 12-15 min

Black Bean and Corn Salsa, Easy Guacamole, and Beef Tacos. A delicious Mexican Meal!

A couple weeks ago when I was teaching piano lessons at my parents house, I smelled some amazing aromas coming from the kitchen. When I had finished with my last student I followed my nose to my mom's kitchen practically drooling. She had made this amazing black bean and corn salsa. She got the recipe from a lady in her ward. She let me take home a bunch to share with Michael in a washed out sour cream container (my mom's kind of Tupperware for people she knows won't bring it back a.k.a. me). Michael and I were just having deli sandwiches for dinner and he had bought his favorite kind of Doritos to go with it and said, "Oh I'll just have like one bite of your salsa." He scooped up some salsa on a tortilla chip and as soon as he ate it he was hooked. We practically inhaled it. It was soooooo delicious! I knew the next time I made Mexican food this black bean and corn salsa or as I've heard it called "Mexican Caviar" would be on the menu for sure!

It is super simple and easy!

 Black Bean and Corn Salsa

Ingredients:

1 can black beans, drained and rinsed

1 can corn, drained

2 cups chopped fresh tomatoes. The store I went to had a pathetic selection of bruised tomatoes so I found 2 that were decent and got a 14.5 oz. can of Fire Roasted Diced Tomatoes.

1 bunch of cilantro, chopped

1 bunch green onions, chopped

2 Avocados (add a little lemon juice)

1 pkg. dry Italian dressing seasoning mix

salt and garlic salt to taste


 Serve with tortilla chips


I also learned a trick from my pal Amy Colby, to keep your avocado pits in the salsa to help it stay fresh and keep the avocados from browning!

Black Bean and Corn Salsa

Ingredients:

2 cups chopped fresh tomatoes
1 bunch of cilantro, chopped
1 bunch green onions, chopped
2 avocados, chopped, add a little lemon juice
1 can black beans, drained and rinsed
1 can corn, drained
1 pkg. dry Italian dressing seasoning mix
salt and garlic salt to taste

 Serve with tortilla chips

We had beef tacos with the meat leftovers from the Pepperocini Beef and Provolone Sandwiches in another recipe from Our Best Bites called Baked Chipotle Beef Tacos. Super yummy!!!I just used some monterey colby jack cheese on a tortilla with some of the pepperocini beef rolled up and then sprayed the seam with olive oil spray and sprinkled some kosher salt on it and laid it seam side down in a Pyrex baking dish. Spray the tops with olive oil spray and add some more kosher salt. Bake at 425* for 20-25 minutes until nicely browned. Dip your tacos in sour cream and guacamole.





I put these together while my girls were eating lunch and stuck them in the fridge until I was ready to cook them that night.



I made up some quick and easy guacamole earlier today to go along with the tacos.

You need:









2 Avocados Mashed with a fork with some lemon juice and salt and pepper
1 small onion or 1/2 Tablespoon + Onion Powder
1 Teaspoon of Minced Onion
a 1/4 cup of Sour Cream
A little more Garlic Salt, and Salt and Pepper to taste
Leave an avocado pit in again to help it stay fresh.

Enjoy your meal!

I prepped everything in about a half hour's time while my girls were eating their lunch today and didn't have to worry about dinner except to preheat the oven and stick my tacos in. The bottoms did get a little soggy since I waited, but it still tasted great! To keep it more crispy it is probably better to put your tacos together right before baking. We still loved them! And it was a great way to use up the leftover meat.
